Ajwain (Carom seeds) and 2 Mangosteen (Kokum) petals or tamarind. Peeled, sliced and kept aside. <br /> <br />For the Masala:- <br />3 tbsp. Coriander powder <br />1 tbsp. Red chilly powder <br />1 tbsp. Cumin powder <br />1 tsp. Rock salt <br />½ tsp. Salt <br />1 tsp. Fennel powder <br />½ tsp. Raw mango (Aamchur) powder <br />2 tbsp. Rice flour <br />6 tbsp. Oil for frying <br /> <br />For the Tempering:- <br />1 tbsp. Oil <br />1 tbsp. Sesame seeds <br />1 sprig curry leaves <br />2 Dry Red chillies <br />1 tsp. Mustard seeds <br />½ cup Shallots <br /> <br />For the Topping:- <br />¼ cup Fresh coriander leaves <br />¼ cup Coconut, grated <br />1 tbsp. Lemon juice <br /> <br /> <br />Method:- <br />- Mash the sliced Arbi with oil greased palms. <br />- Sprinkle the masalas from the masala ingredients on the mashed Arbis. <br />- Heat oil in a pan and fry the Arbis flipping over every minute until golden brown on both sides. <br />- Transfer to an absorbent kitchen paper. <br />- Heat oil in a wok and mustard seeds, shallots, dry red chillies, carom seeds, curry leaves, sesame seeds and fried Arbi to it. <br />- Toss carefully and add grated coconut and lemon juice. <br /> <br /> <br />Arbi Masala Fry is ready to eat! <br />HAPPY COOKING!!!
